Biographical note

PhD in anthropology at the University of Seville. Senior lecturer at the Estoril Higher Institute for Tourism and Hotel Studies (ESHTE), since 1996. Currently, Raquel Moreira integrates the team of the research project “Innovation and Future: contributions to the design of the tourist offer in Lisbon Metropolitan Area”, pursuant to the invitation to tender SAICT/02/2016. In 2017, she was the coordinator of the research project about the gastronomy of the Municipality of Cascais, a partnership between the Municipality of Cascais and ESHTE. Her academic and research activities have been focused on the field of food, gastronomy, heritage, identity and tourism. She has participated in several research projects in the area of gastronomy, including the “Research of the Origins and Influences of the Gastronomy of the Municipality of Almada” (ESHTE) and “Innovate and Enhance the Food Traditions While Precursors of Conservation of Nature and Local Development in Alcácer do Sal” (INIA/EAN). She was part of the team that implemented the first degree on gastronomy in Portugal (ESHTE). She is the author of the books “Receitas de Reis e Pescadores. Memória e Património Gastronómico do Concelho de Cascais” (2017), “Queijadas de Sintra. História de um Doce Regional” (1999) and several book chapters and scientific papers.
